Starts out peppery and minty and obviously spice herb veg, then invariably ages into something a bit pleasantly sour like some traditional saisons no matter how well I sanitize - I prefer the aged version, some people prefer the initial herbal version - I think I've entered this once or twice when I was doing an extract version and never gotten above a low 30. I used to strip the leaves from the stems but it doesn't seem to be necessary. Drying the herbs IS necessary or this will taste extremely vegetal.
