Red Star Premier Blanc, formerly named Red Star Champagne. Saccharomyces Bayanus. Red Star Premier Blanc is a strong wine making yeast strain with a very high alcohol tolerance. Used to avoid sluggish fermentation and to restart stuck ones with remaining residual sugars. Recommended for non-grape wines such as mead, cider, or other fruit wines, dry whites, port, cabernet, and sparkling wines processed by traditional or Charmat methods.
