Red Star Prermier Cuve'e Prise de Mousse, Saccharomyces Bayanus, is the fastest, cleanest and most neutral fermenter. This wine making yeast has high tolerance to ethanol (till 18% vol.) and free sulphur dioxides. Performs well for restarting stuck fermentations. Recommended for anything but residual-sugar wines: Sparkling wines both red and white, Chardonnay, Vidal Icewine, etc.
