Tried a 0.06 absorption rate, a lot of extra loss lately from somewhere. Probably should go back to default, as I ended up with lower OG.

Diacetyl rest start date. Moving from 58-64 to 68-70 F. Smoky, low chocolate, a bit sharp. Maybe some low diacetyl, not really getting it.

Good balance of smoke and porter, but too much smoky bite to the finish, dry and a bit tannic. Will likely age well - even a bit of vanillin would go a long way here. In the short term, probably gonna make use of my golden raisins for this to add more fruit character.

Bottling the golden raison variant. Smoky, mesquite, good warm raisin flavor. I'm testing it warm but I don't like the sticky smoked fruitiness that much, a bit emetic.

Raisin version is overcarbonated, bottles gush on both bottles. Good flavor, but not submittable.

Regular version is clean, cold smoke. Carbed but only to about 1.5, under for the style. Austere.

Regular version is still good, but undercarbed. Not flat but I dunno. Good meaty smoke. No metals.

Gushing on this bottle (and visible damage around the mouth of the bottle itself, which may be related. Smoke, some very low metal (nickel), low chocolate. This could be a raisin one, but unclear.
