Notes

Grist crushed so fine, I did a single infusion mash with full volume. Added 6 grams gypsum and 4 grams calcium chloride, and 4 ml's of acid.

Super difficult to drain wort. Was also very low efficiency - will try to adjust mill and get slightly coarser crush and return to single batch sparging

Whirlfloc clogged the hop bag on racking... need to remove hops (if using a hop spider) prior to pitching whirlfloc

Wort tasted delicious, not too bitter, nice malty backbone. Will be curious to see how it changes after fermentation

Kegged Jan 4, 2021. Set to 30 PSI and shook for a few mins

Sampled that evening - very delicious but a bit undercarbed
Jan 5th it's excellent, very crushable. I think it would have fared well at 1.066 but it's really well balanced at 1.056... maybe 1.060 would be ideal
