Good balance. Around 78 when I pitched, oxygen for 60 then put it on temp control in the basement.

Bottled the cherry version. Already tasting very nice, the cherry and smoke complexity is excellent.

Aroma of black licorice, leather, low banana. Flavor is similar, all bass notes, low smoke, black licorice on the finish, dry. So much black licorice that I find it difficult to get through. Nuttier as it warms.
