For adding the coffee, do you recommend adding 4oz of freshly ground beans or brewing 4 ounces of espresso and adding the brewed coffee to the secondary fermentation?

Good question - we recommend using 4 oz of whole bean coffee and "steeping" them during secondary fermentation.
