A variation on the Floral Honey Wheat from American Sour Beers, meant for a honey flight and a faster fermentation. Kettle soured to about 3.7 (and not lower) - because I'm pitching Sour Patch Kidz in a hopped beer I don't expect the lacto to work, but I want the brett flavors from a higher PH beer. No chamomile. I split this into batches, one with 3lbs buckthorn honey, and one with 2lbs fall wildflower honey that I'd infused with lilac. No higher temp mashout.
