Add steeping grains and extract to the strike water and hold at 145-148. Add the Amyloglucosidase and "mash" for 60 minutes. After completing the mash, remove the steeping grains and bring the solution to a boil, which will denature the Amyloglucosidase. This should give the Amyloglucosidase enough time to break down complex sugars before being denatured in the boil, which will bring the final gravity closer to 1.000 and prevent diacetyl.
Amyloglucosidase is available in 10mL vials through White Labs.
